Three Chocolate Lava Cake Tarts Recipe:

Ingredients:
- 1 1/2 sticks unsalted butter, at room temperature
- 1 cup granulated sugar
- 4 ounces high-quality dark chocolate, finely chopped
- 4 ounces high-quality semisweet chocolate, finely chopped
- 4 ounces high-quality milk chocolate, finely chopped
- 4 large eggs
- 2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour
- Salt to taste
- Confectioners’ sugar for dusting, optional
Instructions:
- In a medium bowl, whisk together flour and salt. Set aside.
- In a large bowl, using an electric mixer, beat butter and sugar until light and fluffy, about 2 minutes.
- Add eggs one at a time, beating well after each addition. Beat in vanilla extract.
- Melt the dark, semisweet, and milk chocolates in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth.
- Beat in the melted chocolate until well combined.
- Beat in the flour mixture until just combined.
- Pour the batter into a piping bag fitted with a round tip.
- Press the piping bag into a 12-cup muffin tin lined with paper liners. Fill to the top.
- Bake at 425°F (220°C) for 12-14 minutes or until the edges are set but the centers are still slightly jiggly.
- Let cool in the pan for 1 minute, then transfer to a wire rack to cool completely.
- Dust with confectioners’ sugar, if desired.
